About the tack, I guess it depends on your kite.  Mine is voluminous (ie
old), and sets well quite deep downwind.  If youre in marginal wind
strengths (>20kts for me), allowing the tack freedom lifts the bow and gets
you going.  It needs to be strapped in more as you harden up, but only up to
a point, where it seems to slow down again.   I welcome views.

And the jib, well you roll it away if youre as bad a sailor as me!
If you keep it up and its windy, it simply narrows the gap between going
fast and being hopelessly overpowered ie, slow.  If youre good, you can
find that groove and live in it, but Im not that good, and I find that I am
more likely to end up at the bottom mark in some semblance of order ready
for the upwind leg if I drop to a two-sail.   Thats a low-risk approach
which if I managed to race more often might quickly give way to three-sail
reaching.
The further point though is that I cant convince myself that it improves
the flow over the rig taken as a whole.  It sure feels fast (hairy?), but we
dont have enough other 27s here to do boat for boat testing to make the
point.

Hydraulic brakes are much more expensive here and hardly used.  Drums with
rod linkage are easy home-fit, dirt cheap and rinsable.  Right or wrong, I
suspect that whatever metals you use in salt water occasionally will cause
trouble, so may as well make it as painless to bin as possible.  There is no
problem with braking power with 4 drums.
