For best fuel economy I would try to find an engine that has closed loop
fuel mixture control.  Like an engine from a mid 90's pickup with O2 sensor
& computer controlled multiport fuel injection.  Transplant the entire
powerplant & transmission.  Adapt your driveshaft to the needed length.

This violates my own KISS engineering principle, where "keep it simple"
means burn a bit more fuel to enjoy a simple engine from days gone by.  An
engine without a pile of sensors & wiring.  But when you get it all working
right, that PCM controlled powerplant really burns as little fuel as
possible.

By the mid 90's, all of the three domestic V8 lines were refined quite
well.  So pick the one you understand better.  I like the Chrysler absolute
pressure control, instead of the GM mass airflow sensor method, because I
am familiar with the Dodge way of doing things.  The Dodge engine to look
for is the 5.9 liter, or 360 cid.

You might also select one brand over another based on how good a deal you
get at the local wrecking yard.  Take the entire critter home, and carve
out all you need.  Then sell the hulk back to the wrecking yard.  That
usually works out better, and you don't forget some remote sensor - like
the temp sensor under the battery tray (which is used to tailor the charge
profile to the battery temperature).

Your fuel savings will not pay for all that work, but look at the great
entertainment opportunity which awaits you!  And when you are finished, you
will really know the internals quite well, making long term care of your RV
easy for you.

Could use some advice on which engine above would be best to power a
20 to 24 foot motor home.

And right now I get somewhere between 9 to 12 MPG with my 351 Ford
powered Mini but I would like to know what real gas milage a 350
chevy gets in one of thies smaller Class C Motor homes. Any anwers
