I would be very careful letting your kids play with Nixies. I'm not saying don't let them but find low energy power supplies to run them. You will need 200 volts or more from a switching power supply. Do not use a transformer or line voltages.
It would be safer to let them try 7 segment LED displays (5 volts) or Vacuum Fluorescent displays (25 volts) see below. The input would be BCD which can be 4 switches with pullup resistors. The chip is a CMOS 4543, ignore the _rev typo. This one runs from 5v using a $2 step up supply from China for the +25v . They can learn about clock generators and decoders, useful stuff.
