Oops:

        $ ./configure --help

        --with-out-mib-modules=\"list\"   Compile without these mib modules.
              ^

There should be a hyphen in "without".
(mutter mutter mutter autoconf mutter mutter)

Try
        --with-out-mib-modules=mibII/interfaces
