(trying hard to not put HELP in the topic)

As most of you would receive SPAM, I guess someone here would be able to
help me understand what is happening.

What I have noticed is that an abuse@.....  is not always available.

So I would guess sending it to the next higher level provider would be in
order.

But I am totally lost when it comes to understanding how to read from where
the mail came.

Yes...  Look at the FROM: field or REPLYTO: field.

Some SPAMers have phoney addresses in those fields, so that is no good.  AND
 there may not be an abuse@ at that server.

I have seen a few SPAM programs but I would like to learn a bit about how to
read the mail and write my own.   (As much as I don't like re-inventing the
wheel.)

Would anyone mind helping me?
