You could add the "order by" clause as a dynamic criteria to the dataobject.
You could get the column name as a "web var" and use it to sort the result
set.

I don't know what the best approach would be, but another option would be
to unbind the DO, have a DO for each sort, then execute the appropriate DO
and set the results set values into the fields.
Not elegant, but sometimes the clunky approach works better.
