No you can't see this at the packet level.  There is a string match, but
there are entirely too many unresolved issues to effectively block spam.

I use ask (http://www.paganini.net/ask) and spamassasin along with rbl
and strict DNS resolution for accepting emails; spam *still* gets
through - but only about 1/day as opposed to dozens.
