You can't because David Colston coded the software that way.
Why? Only David Colston can say. I've always regarded it as highly
inconsistent and illogical to provide access to the addressbook for
sending E-Mail to a primary recipient yet not allow users to
access the addressbook to find the correct E-Mail address for carbon
copies. However, note that you can mark more than one recipient when you
ARE in the addressbook. Thus, you're able to accomplish what you'd do
with CCs. (i.e. your message would still go to more than one
recipient) Blind CCs are another problem and must be accomplished
with secondary address list files which you'll specify in the "TO:"
field of your E-Mail message.
