It's trying to resolve the name you entered for the mail server.  If
you're not online at the time, it'll hang for (quite) a while.  Set it
up while you're online.  Same thing will happen when you enter a news
server name.

If you're online and it still hangs, check that /etc/resolv.conf is
setup properly.  If you installed the caching-nameserver and bind
packages, you should change /etc/resolv.conf to have one "nameserver"
line that reads "nameserver 127.0.0.1".

Check from a command prompt that you can ping both name and number
addresses.  Do a 'host <mailserver>' to see if it can resolve the name
to an IP number.

Somewhere in these tips lies the answer... :)
