For most people, updating just kernel-2.2.something should do.
kernel-BOOT is for internal use; it's used to generate the installation boot disks.
kernel-doc is the documentation - there won't be any big changes here
kernel-fb is the kernel you want to use if you need framebuffer devices
kernel-headers is required to compile some applications
kernel-ibcs is some compatibility stuff with other Unixes
kernel-pcmcia-cs is the PCMCIA drivers
kernel-smp is the SMP (multiprocessing) version of the kernel
kernel-smp-fb is the SMP version of the kernel with framebuffer suppport
kernel-source is the kernel source; you need this if you want to compile a
              custom kernel.
