Cheers Bryan, this was what I was looking for, a nice simple command which worked perfectly. I dropped the rate down from 44100 to 8000 as these tapes are only speech and do not contain music. Quality seems very acceptable, although I think I will have to compress to mp3 format as even these .wav files are still rather large.
