Ha! You found me out. I am that programmer.

They edit ASCII text files. There is no bold or italic in text files. 
The closest they get is editing TeX or HTML:

where a word can be <B>bold</B> or <I>italic</I> in the final result,

but the file contents are just simple strings of characters.
