Try booting to console mode. Log in as "root" and run
/usr/sbin/mouseconfig. Which mouse do you have? If it's a
ps/2 style mouse, you should be able to select "generic
PS/2 mouse" and "emulate 3 buttons" should work for most
2-button mice so you can more easily do cut & paste.

Hmm...do you know what your horizontal & vertical refresh
rates are? What video card did you select? Also, have you
tried CTRL+ALT+Keypad-plus or keypad-minus??? That should
allow you to select multiple resolutions. In all
practicality, you only get ONE "properly sized" desktop, so
you should really choose the desktop size you want to run
at most of the time and comment out the others or don't
select any "alternate" resolutions when installing.
