Imagine you have OpenOffice.org, a web browser, mail client, IRC client, development environment, a console, a file browser, etc. etc. Think of the horrible pain it would be to switch between those windows the whole time :D Then think how cool it would be if you could sort of categorise your windows according to desktops, thus, XMMS on desktop 1, web applications on desktop 2, office on 3, development on 4, etc. Which is why we have 4 virtual desktops. At least, that's why I have 'em. Hope this answers your questions.
