Why not try something simple; first, whilst in Evo, click TOOLS => SETTINGS => COMPOSER PREFERENCES => SIGNATURES and delete anything that's in there; restart Evo. Go back to the COMPOSER PREFERENCES and try adding a signature again. If that doesn't work, you might want to update/upgrade GTKHTML and the other associated libs; you can use Ximian's Red-Carpet to update Evo and the libs without a hassle/problem.
