I don't believe that you can change color depth on the fly, you have to
restart X with the new color depth.  you can place multiple color depths
in your /etc/XF86Config file so you can startx with an argument like "--
-bpp 16" to override the default.  

If you're one of those people who boot directly into X it may be more
difficult
