Well here's the run down.

Postfix is a mail server.  Basically it does what sendmail is so famous
for doing, but Mandrake seems to love it, so that's why it's in the
standard install.  Go ahead and let it install.  By default it's a close
port so you won't have to worry too much about people using your box for
SPAM.

I'm pretty sure you're running a SMP box.  So you'll go with
uni-processor.  Meaning you have only one processor and you're not using
the new AMD SMP.  If you are, yo'ure a lucky man! 

There have been a lot of posts on the list having to deal with the
Geforce 2MX.  Honestly, I must say I don't pay attention to those posts
since I don't have that card, therefore I wouldn't be much help.  Check
out the documentation that nVidia has on their site, they may suggest a
kernel compile is needed to activate some options.  But I'm sure it will
work with the basics with out all of that.

Low, Medium, and High security is really a basic setting, kind of like a
"get ya started" sort of things.  It sets the machine to a basic security
setting.  I'd suggest medium.  If you go with high, it doesn't let you
start XWindows unless you make the exception and allow it.

Recompiling the kernel is something that's good to know how to do, but
Mandrake has done a very good of optimizing it for you, so the "out of da
box" version works standard.  Now if you'd like to play with the new
2.4.5, you can do that, and compile and install it, and then use if you'd
like.  But make sure you follow the directions so you can keep the
already existing kernel in case the kern you built just sucks!  Use this
doc page for doing that, it's really rather helpful!
