This really depends on which version.  If you are running 3.10 of SA, there 
are several files in the /etc/mail/spamassassin that need to be copied 
including init.pre, v310.pre along with the local.cf and any additional 
rules.

Also, bayes can be setup two ways, either individually, with per user 
settings, or globally with a global database.  If you have created a global 
database, you will need to locate and copy the global database over in order 
to transfer bayes info to the new installation.  Most people use individual 
bayes stats, but some are using global versions.

Also, if you use something like RulesDuJour, you will also need to copy and 
transfer that to the new machine as well.  Finally, remember to alter your 
procmail recipe on the new machine to pipe mail through SpamAssassin.  If you 
are using a .procmailrc file, or a .forward file, you may need to locate 
those and copy them to the new machine.  But you might want to move over 
your /etc/procmailrc file as well.
