There is not simple way of seeing the definitive list of tags used by each of the two renders on the www.openstreetmap.org website. You can look at the code for each which you will find in svn however it's worth pointing out that the list of what is rendered changes frequently, especially for the osmarender layer. In both cases, what is rendered is only a small subset of what people might be tagging with. The renders on www are only meant to be a showcase. The whole idea of OSM is that you can take the whole contents of the database (ie via the planet file) and create whatever rendering you like using the tags you want.
