Best to stick to physical attributes of the object only. So surface=unpaved
is good (I use it all the time) but for rendering that will depend on what
the person rendering wants to colour the object if representing the data in
a traditional map format, so its not factual. Stick to the facts about the
object and you can't go wrong.
