Guillaume, Welcome to OSM. Depending on what you're trying to do with the data, you can either download a map extract for each state from one of the extract sites like CloudMade, or you can search the map for a specific road.
There are several utilities that can re-parse the .osm XML format into .gml XML format. FWtools came up on a quick Google search. Please remember that the map is community effort WIKI, and that the data may or may not always be up to date.
