I don't know if the datum affects the *stored* track points, but it does affect the *reported* lat/lon in NMEA sentences. At least it does on a Garmin Geko 201. Something to be aware of if you are doing live GPS tracking. Since this is a newbies list I would recommend that everyone should use the WGS84 datum (and definitely for OSM) except when you know you don't want it.
