Potlatch's set of defined POIs does not necessarily match the set of defined POIs for any particular renderer (such as the default OSM slippy map). Whether you leave the feature as a single node, or decide to redraw it as a way, give it the tag "building=yes". It should not have an "amenity=*" tag. You may choose to add the tag "landuse=commercial" but that would make most sense applied to a way along the boundary of the entire grounds or even the entire office-use district. As far as the name, the "name=*" tag should contain the current name of the building in the context of its new use as an office, if it has one.
