Dear Doug, That isn't a tag that is used frequently, but does appear in the data base. http://taginfo.openstreetmap.de/search?q=aquaculture#values You might to have a look at the current uses and decide if you want to tag the entire farm complex as landuse=aquaculture, and then the ponds themselves as natural=water, or something else.
