It seems that many distributions have some way of performing a fairly minimal installation.  I’d be curious to see how Unbuntu runs.  Of course, Debian has a fantastic ability to be pared down to exactly what you want.  Ultimately, though, the decision is best based on what you’re going to do with it.  If you figure that out you’ll be that much ahead.
