That option is in the KDE control center.  Since you're using Fedora, I don't 
know if they even bother to include the option in the menu.  So if you can't 
find it, type "kcontrol" in a command line to launch it.  "File Associations" 
is under the "Componets" option.  Easy enough to get to in Mandrake, but 
Fedora likes to break things in the KDE control center last time I compared 
the two.  Hopefully it's there.

If you decide you like Gnome, I'd stick with Fedora since they concentrate on 
that.  But if you decide you like KDE, down the road I would suggest trying 
SUSE or Mandriva (the distribution formally known as Mandrake)
