Hi Phani,

     The test which you are planning to do can be performed by writing
testcases for each service/API running with it.

Any ways Symbian has got some vulnerabilities and you can target the base.
apart this the upper layer application which is developed to perform some
data exchange/ assurance / etc.. can also be audited.

For Ex:
             TC1 - Running Fake WebServer and check if the application
(Mobile) gives its identity and sensitive details.

If possible let me know your target platform/application  and architecture,
will try to explore more in it.
