The problem with bittorrent is that it's not using a static port for
communication. There are some known ports for communicating with the
tracker, but actual data transfer is usually done on non-known ports.
That's why it's hard to identify and filter without deep packet inspection.

You can go the other way - mark all well-known traffic (web, mail, rtsp,
video) and the rest will contain torrent.
