I, the great enemy of the concept of the HOWTO itself as an utter abomination of documentation, forgot a detail: Nfsen needs the timezone properly set in PHP. I just use the php.ini file (I copied /usr/local/etc/php.ini-production to /usr/local/etc/php.ini and set date.timezone = "UTC") Yes, I usually run Netflow on UTC.
