Discard this post.
NHibernate is just working fine.
What I was doing was :
- create object graph
- save object graph with Session
- re-create (deserialize) object graph
- delete object graph
With Session.Delete(myObjectReCreatedWithoutSession) NHibernate would
delete the root object but would then only issue Update statements to
set to null the foreign keys in the Many sides instead of issuing
Delete statements.

Sorry for the confusion!
