I'd like to suggest Avons. I have a set on one of my 700SC bikes and I
really like how they feel and especially how they corner. For my money,
I'd rather have a tire that is, perhaps, a bit stickier and wears a little
faster, than one's that's engineered to be hard and resistant to wear so
it'll last longer.

I put Cheng-Shin Barracuda-Vs on my 650. $109 for both including
installation and balancing (I just brought the rims in). They seemed fine
for me. They didn't wander or follow grooves too badly and did decent in
rain, cold weather, and hot weather. I didn't try racing them or diving into
turns though.
