Trust me, it will happen. I've ridden there extensively. Geographically, the variety of rides is astounding -- the mountains, the desert, the coast -- all easily reachable within day trip distance. And the scenery is awesome everywhere. My favorites: The Pac Coast highway south to just about anywhere. But the Santa Cruz mountains are just an hour or so in that direction. Try both for starters. The loop to and from can be done in a day.
