At the point when I discovered the magic of countersteering, all of my wind difficulties went away. Now I can flick the bike into the wind faster than I can even think about it. Not sure if that's the case with you, but I thought it may be contributing.
FWIW, when I started out on the bike I went a good 1000+ miles thinking that I understood countersteering.... when I was really just leaning. It's totally possible to ride a 750-sized bike for years and not 'get it'.
