I'll add the following: If you are't sure, go ahead and upshift to a higher gear. If the bike chugs, you're too high. If the bike runs fine, then you're fine. When you go to speed up, you may need to downshift to get that extra oomph, then you can upshift again. Basically the exact same as a car. The added benefit to a manual - you get to choose between power and economy - you can always change down to get more power (in a controlled manner), and change up to get better economy.
