You should probly concentrate your search in the dirt bike area, since that's mostly where techology meets old school. Almost no one wants a street bike with "manual" start, so none have been manufactured lately that I know of, and I wouldn't buy one if they were, mostly because they were a pain in the ass. I love old bikes, don't get me wrong. But there have been certain improvements that have been unarguably worthwhile. Electric start, chief among them. Fuel injection. Cast alloy wheels (no spokes). Solid state ignition...to name a few. Sounds like you're more enamored by the past, than actually having experienced it. Kick starters are no fun. Trust me.
