South Appalachian Mountains is where its at (in the whole world)!

Suche Creek road over Suche creek mountain, ne of Chattanooga (Map above) 
is the best 20 mile course you can find, no cops (10 to 20 years ago 
anyway.) It's got hi, med, and low speed coming down West side of mountain. 
Ride to one side and back again. TN has the best roads for riding GA, SC, 
TN, and NC mountains where they meet is nice. Watch out for NC moonshiners 
throwing gravel on curves and nails in gravel at rest stops - NC has the 
worst repair roads of the bunch. Greenville, SC has some nice mountain 
highways as well, but Fall tourist season may be some traffic. North GA is 
a blast but too may cars in Fall usually. Bring your camera if you take 
that route. It changes every time you ride down the road it seems (except 
in dead Winter, which is actually a good time to ride since fewer cars on 
the road). Along the beach is traffic, red lights, speed ticket traps, and 
flat land if that is what you want. 

Ashville, NC to Knoxville, TN to Chattanooga, TN (to swing by Suche creek 
rd (Mountain) and then traverse east on Highway 64 to dump down in GA near 
SC border and travel south. You will dump down into Atlanta to get on 
Interstate 75 to make time to FL. It's all flat and foothills below 
Atlanta, so get it over with on expressway. FL sucks too: basically 2 
expressways go down state below pan handle and traffic parking lots on 
those 2 expressways during the day (travel at night to bypass.) SE US 
Appalachian roads are a world treasure ('God's Country, ha ha.)

I would travel fast at night to there, ride all in day light there, and 
travel fast at night out (with cat naps in between - tricky on a motorcycle 
though). Everything is in Atlanta, if you need it going through. But that 
is just me. I put over a half million miles on bikes and cars in the SE 
USA, so that is my experience. Be careful in south GA and SC for speed 
traps: every hill top follow and do not lead - ha ha. Have fun! And get a 
new set of tires before you leave too.
