If you are handy and okay with doing extra regular maintenance, a 70s 750 will be more tame than a modern 750. It will be heavier and less well balanced than more modern bikes though.
I started on a 750 Nighthawk, which is hardly a sport bike, and even at 6'3" I feel like I probably would have learned the basics better on something smaller. If you intend long trips, I would STRONGLY recommend avoiding anything "cafe" modded. The bar positioning and the lack of any wind protection at all will contribute to increased exhaustion at higher speeds. The handlebars are not ideal for someone learning either, as they will encourage learning bad habits and poor weight placement. The smaller bikes might not immediately let you do long highway jaunts at high speed, but they do facilitate learning quite well and are generally very capable machines. They also hold their value quite well, so you can buy, learn, do basic maintenance and still get out almost what you paid for it when you upgrade.
