The fuel gauge itself isn't anything to rely on, I typically reset the
Tripodometer with every tank and start looking for a gas station around the
90 mile mark. That said, it sounds like your sending unit is loose. Drain
and remove your tank, and you'll find 4 bolts holding a square plate on the
bottom of it, that's the sending unit. It's got a swinging arm with a float
on the end of it that goes up and down with the fuel level. Right at the
hinge where that arm swings there's a small metal cover that's just held in
place with some tabs. Gently bend the tabs back and you can slide that off,
there you'll see a coil of coper wire and a copper contact connected to the
swing arm. As the arm moves up and down that contact sweeps back and forth
across the copper coils. I suspect that yours has gotten loose and doesn't
make contact with the coils anymore after it drops beneath a certain level
thus indicating an empty tank. If you're careful you can gently bend that
down a little so it makes contact with the coils again then slide the cover
back in place and bolt it back up. There's a big O-ring that goes in there
to keep it all from leaking so don't forget that bit.
Or, you can just reset the tripodometer after every tank.
