They're formed seals, they can't really be turned inside-out. According to the shop manual "Install the piston seals and dust seals with their small inside diameter facing in." The important thing is making sure they don't get twisted as you install the piston, that's were soaking them in brake fluid before installation comes in, it lubricates everything so the piston slides past them with twisting them. Also, I know you sanded your pistons but if they have any pits or irregularities they won't seal and need to be replaced.
