Nim earns mention in the news (unfortunately?)

Indeed. Viruses, trojans, malware have been obfuscated using encryption, 
polymorfism, self-mutation etc for decades. Switching language to avoid 
detection sounds dubious. Furthermore, Nim compiles to C and analyzing malware 
written in C is pretty routine.
