Mail.app doesn't reduce spam. It has a spam filter or something that routes spam into a special folder. Most spammers use addresses that are valid only at the time they send their spam, so there is no way to stop them (don't click on their links, which tells them they have found a valid address). Mail does have a "bounce" feature, but again this is effective only when the spammer has a valid return address, such as the Nigerian scams.

If anyone has a good idea on how to actually reduce or eliminate spam, I'd like to hear it.

As an aside, I thought I would try-out Apple's Mail.app on the basis it may reduce spam and I could also use AddressBook.
Does Mail.App then reduce the amount of spam? - Here people are claiming that it's just about the same amount coming in each day.

What the exercise proved is that Nisus Email is so much simpler to use and, especially, to set up filters that there is no contest. Once I can write messages in NE X and just send through NE X, my happiness rating will just about complete and so will my OS X requirements. (:
