I do not deny that I may be overestimating what Document Manager is
supposed to do. Call me naive, but I would expect it to help users manage
documents. 
:-) 
I suspect that it will evolve into something that does just that, but
only after things like proper styles (and tables) support has been added
to NW Ex.

At the moment, Document Manager only lists the files you have created
using NW Ex. It would be nice to see someway of organizing the files
within the list, either by applying categories, labels, or some other
means. The current list only setup would soon become unmanageable after a
few weeks/months of using NW Ex.

It would also be nice to search for a document or documents within the
list. At the moment, it displays a brief preview of the first few lines
of a document, but this would not help you much if most of your documents
are letters.
