Lemon Basil Chicken and Rice

4 small boneless, skinless chicken breasts
1 teaspoon garlic powder
1/2 teaspoon lemon pepper
1/2 teaspoon dried basil
1/2 teaspoon margarine or butter
1 1/2 cups water
2 cups sliced mushrooms
1 teaspoon lemon juice
1 teaspoon lemon peel
1 cup uncooked rice
Combine garlic powder, lemon pepper and dried basil and sprinkle over
chicken breasts. Melt margarine in a large nonstick skillet over medium
heat. Add chicken breasts and brown on both sides. Remove chicken from
skillet and keep warm. Add water, mushrooms, lemon juice and peel and
rice and bring to boil. Return chicken to the skillet, cover and simmer
for 15-20 minutes or until all liquid is absorbed.
Makes 4 Servings
Serving Size: 1 chicken breast 1/2 cup rice
