I think the preferred way is now the ‘.override’ function that is automatically added to derivations called with ‘callPackage’ (which goes well with the ‘packageOverrides’ option of Nixpkgs, though one can be used without the other.) For finer-grain changes, there’s ‘overrideDerivation’.
