After the month+ long quest, my wife has a solution that works for her. The 'right' solution seems to be using an Apple iTV box and set up display mirroring, but that requires purchasing some additional device that she didn't want to do for this one function.
But she found through some other friends a solution that works for her. There is a iPhone 4s to VGA cable. She plugged it in and it 'just worked' to display her iPhone app directly on a video projector for use in a classroom. This solution is thanks to a parent of a horse lesson student that takes lessons at the Girl Scout Camp where we live and wife works. The parent did the research and found the cable and gave it to my wife. ... I wish I knew the the name of the company where the parent works that makes and markets iPhone addons ... but hats off to them for coming up with a 'correct' answer for my wifes desired use of this device. BTW, the cable has an Apple logo on it, and was bubble wrapped as an Apple product. I haven't seen the packaging or I would include the part number if I could.
