I've heard good things about GrapheneOS. LineageOS is another popular 
degoogled Android image. 
Google wasn't getting enough data on users from the search engine so they 
created a browser to spy on everything you browse and not just what you 
search for.
They still weren't satisfied with that amount of data, so they provided 
entire operating systems (ChromeOS and Android).
They have reached an Orwellian level of stalking and surveillance.

The Android project itself is Open Source. Most phone manufacturers bundle 
Google's spyware with their OEM images but you can put Open Source Android 
images without Google on many phones. Unfortunately, many app developers 
still write dependencies on Google services so not all apps are available 
or work.
