facebook uses php for their platform and node for some of their real time 
components
linkedin uses node for delivering data to mobile clients

your startup can mix it. in fact i'd do that. take cakephp for standard 
things like crud etc. and put a node app aside for streaming and pushing 
data.

totally viable. 

my experience with node-only: don't do that when you have to learn node and 
the ecosystem first. the ecosystem is growing faster than the tools, which 
are needed to search for and decide on modules you need.
