It looks like you are using the latest version of the apisix image. In the latest apisix 2.99.0 version we introduced some [break changes](https://github.com/apache/apisix/blob/master/CHANGELOG.md#300-beta), it changed some configuration, we are putting the configuration Synchronized to the example, now you can refer to https://github.com/apache/apisix-docker/pull/366/files#diff-0b92a5887e8750a86009964b27e1c2411501faa60c91edee122fd235190afe58 to adjust your configuration.
