The Documentation lacks an introductory overview that gives more context on
what exactly APISIX is and the problem it solves.

We can create a section called "Project Overview".
That will introduce the projects, and what exactly.

For beginners who do not know what problems exactly APISIX solves, this
document will be really useful to understand this project.
