can you try `unset APISIX_LISTEN_ADDRESS`?
and check files under `/usr/local/apisix/conf/`, the PID of
`/usr/local/apisix/conf/apisix-{PID}}.sock` should same as
`/usr/local/apisix/logs/nginx.pid`
